Fresh Basil Pesto

Let the harvest begin!! These beauties were in our garden, just waiting to be picked, or thinned, in the case of the onion. The peas and basil are really producing. The Kale and onions are just starting. We see delicious things in our future.

With so much basil I just HAD to make pesto (recipe below):

Only five main ingredients (basil, almonds, garlic, olive oil, grated Parmesan cheese)

The food processor wouldn't chop the almonds, so I used my blender.

Add the basil...

Then the garlic. Blend the olive oil in well, then mix in the cheese until just blended.

Delicious!

 Recipe:
Fresh Basil Pesto

2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts, walnuts or almonds
3 medium sized garlic cloves, minced

Pinch of salt and pepper to taste
If using walnuts or almonds, pulse the nuts a few times in a blender. Combine the nuts and basil in a food processor, pulse a few. Add the garlic, pulse a few times more.

Slowly add the olive oil in a stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and pepper to taste.
